Since 1946, Olivares de Don Ignacio S.A.has been synonymous with excellence in the production of extra virgin olive oil. Founded by Naser Mansur, the company began its legacy in La Libertad, Rivadavia, Mendoza, with the planting of its first vineyards and olive trees.
Innovation and International Expansion
In2002, the company took a big leap by producing its own extra virgin olive oil in bulkfor the domestic market and export to the U.S. and Canada. Thanks to its high quality standards, it has established itself as a leader in the export of Kosher and Premium Organic oils..
Modernization was immediate and, in 2018, it incorporated an automated production line with cutting-edge technology, ensuring unsurpassed quality in every drop of oil.
Certification of Origin and Guaranteed Quality
In 2022, it obtained the prestigious Indicación Mendoza Geographical Indication (GI), the only one in America, which certifies the traceability and excellence of olive oil from its origin to the consumer.
Commitment to Quality and Gastronomy
In 2024, with the aim of promoting healthy and natural eating, Olivares de Don Ignacio launched its line of packaged products under five own brands: Patagonia Gourmet, Castemonte, Giglio, Oroliva and Finca San Marino, intended for both the Argentine market and export.
Their oils are present in wine shops, warehouses, restaurants, supermarkets and e-commerce in the main cities of Argentina and have reached international markets such as the USA, Japan, Canada, China and Brazil.

Extra Virgin Olive Oil: Quality Production and Sustainability
Crops in an Ideal Environment
The Olivares de Don Ignacio crops are developed in a privileged environment, with an arid climate of valleys and mountains, average annual temperature of 17 °C, little rain and an atmosphere of high solar radiation. Located at 690 meters above sea level, these factors allow optimal thermal amplitude, key to the production of high quality olives.
There are 60 hectares of olive trees in full production and a new plantation of 100 more hectares, cultivated in stony-sandy soils, irrigated with pure meltwater from the Andes Mountains. These conditions guarantee an exceptional oil, rich in polyphenols and antioxidants.
The olives are harvested at an early stage of ripening (veraison veraison) to ensure a healthy product. The following varieties are grown:
- Arauco (exclusive genetics from Argentina)
- Arbequina
- Coratina
- Frantoio
- Picual
- Farga
Technology and Sustainability in Production
Processing with Cutting-Edge Technology
Our factory incorporates state-of-the-art technology with Alfa Laval continuous system of 3,200 Kg/Hour. This system allows the olives to be processed a maximum of 6 to 12 hours after harvest, avoiding oxidation and preserving their natural properties.
100% Sustainable Production
Committed to the environment, we follow the UN Sustainable Development Goals:
Zero waste: solid byproducts are used as biofuel in the thermo-kneading process.
☀️ Renewable energy: we use solar panels for lighting.
The result: healthy, tasty and aromatic oils, with an acidity of less than 0.3%, organic (without the addition of preservatives or chemicals). An authentic natural olive juice!
Production and Packaging Capacity
Our factory has:
- 1,000,000 liters capacity in stainless steel tanks.
- Packaging line of 2,500 bottles/hour.
- Conservation in stainless steel tanks at 18 °C until packaging.
- Availability in glass or PET bottles, in different volumes depending on the marketing channel.

Gastronomy and Recipes with Extra Virgin Olive Oil
Tasting extra virgin olive oil is a unique sensory experience, where the virtues of a natural, fresh and healthy product are appreciated. In this process, its organoleptic characteristics are assessed, such as spiciness, bitterness, fruitiness, aroma, creaminess and appearance, as well as the packaging in which it is preserved.
Steps for an Olive Oil Tasting
1. Prepare the Palate
✔️ Ensure that the mouth and throat are clean of any food or drink.
✔️ Rinse your mouth with water before starting.
✔️ Between oils, cleanse the palate by eating a piece of green apple and wait more than 5 minutes between each tasting.
2. Ideal Oil Temperature
✔️ Hold the cup with the palm of your hand to heat the oil.
✔️ Cover it with the other hand and rotate it gently for 30 seconds, allowing the volatility of the aromatic compounds.
3. Evaluate the Aroma
✔️ Bring the glass closer to your nose and take soft, slow inhalations to identify the predominant aromas:

4. Test the Oil
✔️ Take a small sip (5 ml) and distribute it throughout your mouth.
✔️ Detect the four basic flavors:

5. Identify the Aromas in the Mouth
✔️ With the oil in your mouth, keep your teeth clenched.
✔️ Introduce air with your mouth semi-closed in short, successive aspirations.
✔️ Identify retronasal aromas, which allow a more complete evaluation.
6. Analyze the Texture and Final Flavor
✔️ Slowly swallow the oil and perceive its fluidity and unctuousness.
✔️ Notice the intensity of the itching and bitterness, characteristics of quality oils.
7. Correct Tasting Order
For a better experience, it is recommended to taste the oils in the following order:
- Mild Blends or light varietals: Arbequina, Arbosana.
- Medium Blends or intermediate varietals: Frantoio, Manzanilla, Farga.
- Strong Blends or intense varietals: Arauco, Coratina, Picual.
